How We Began

From a Grandfather’s Kitchen to Culinary Excellence

Chef Aldwin's path in cooking began in the Philippines, watching his grandfather prepare meals with love, care, and intention. That early foundation ignited a lifelong passion. After moving to Canada, He pursued culinary ambitions right after high school. While his initial dream was to chase Michelin stars, his journey eventually led him back to what truly matters: the joy of feeding people. Whether creating an elegant, upscale dish or preparing something simple and soulful, he pours his whole heart into every plate. Seeing guests savour every bite brings deep happiness into his soul and inspires him and the company to keep growing and moving forward.

Food and hospitality were central to Chef Aldwin’s upbringing in the Philippines, where his grandfather set the family's gold standard for well-prepared dishes and genuine care for guests. That early foundation ignited a lifelong passion, leading Aldwin to pursue his culinary dreams in Canada right after high school. Driven by relentless ambition and a desire to redefine what a food service brand can accomplish, Chef Aldwin founded Mise En Inc. His vision goes far beyond traditional catering: he strives to build one of the premier hospitality companies in the industry. Whether preparing an intricate fine-dining menu or simple comfort food, Chef Aldwin pours his whole heart into every plate, finding his deepest happiness in bringing joy to those he serves.
