This season, we’ve partnered with Chef Antonio Rossi, an Italian-born chef known for his handmade pastas and wood-fired cooking. Together, we’ve crafted a menu that celebrates the flavors of Southern Italy:

Spring 2025 — Chef Aiko Tanaka, Japan → Kaiseki-inspired tasting: wagyu tataki, miso black cod, matcha soufflé.
Winter 2025 — Chef Maria Gonzalez, Spain → Tapas, saffron paella, Basque cheesecake.
Fall 2024 — Chef Yusuf Karim, Morocco → Tagines, saffron couscous, preserved lemon chicken.
